They run restaurants at some of the city's top tourist destinations, including Sydney Tower, the Botanic Gardens and Centennial Parklands. Now the Trippas White group has set up shop at Echo Point, hoping a wine bar, milk bar and restaurant will draw the crowds.
Troy Parry, general manager of tourism services at Trippas White, said the company was instantly taken with the Katoomba site.
"From our first visit when we stood on the deck and saw that fantastic view we knew that it was something we wanted to be part of."
Mr Parry said the 20-something-year-old building had originally housed food outlets.
"In the early days it was very focused on food and beverage but it lost its way over time," he said. The company hopes to restore it as a food destination.
Trippas White will promote the centre to the 500 independent tour operators it works with across the US, Europe and Asia. The arrangement should see an influx of busloads of tourists, Mr Parry said.
There has been a major renovation of the site, which now houses Bar NSW and the milk bar on the ground floor, with The Lookout restaurant on the upper level.
Bar NSW, which will be open daily from 11am until 8.30-9pm depending on the demand, stocks only NSW products, including wines, spirits, ciders, beer and food. The milk bar sells light snacks, pies and ice creams and there is ample seating at this level, both inside and outside on the deck.
The Lookout is in the process of opening full-time. At the moment it is hosting one-off events, such as a Slow Food lunch last Sunday.
The venue will also be available for weddings and other functions.
Mr Parry said the team was "very conscious" that, particularly with day visitors, the quality of food and how quickly it could be served were "paramount".
"So we're taking out time to ensure we have all that right because you don't get a second chance."
He also wanted to encourage Mountains residents to visit the centre.
"If you don't get the locals on board, then you don't have a business," he said.
The company is working with local hotels and other businesses as well as with Destination NSW to spread the word about the new look at Echo Point.
