The girls are back in town.
Former Ashcrofts duo, Corinne Evatt and Mary-Jane Craig, have returned to Blackheath and are about to open Cinnabar Licensed Kitchen.
Cinnabar – the word is derived from mercury and describes a rich red colour that will feature in the new decor – is a welcome return for the pair.
“We were absolutely thrilled when it came up,” said Craig of the highway venue which previously housed Escarpment restaurant and later tapas bar.
“It’s so hard in Blackheath to find a place with all the infrastructure in place.”
Craig and Evatt established themselves in the fine dining scene from 2000 to 2013 at Ashcrofts, which won chef’s hats four times.
They went on to set up in Wentworth Falls with La Famiglia Bar and Pizzeria, which they sold last November.
Cinnabar will be a “distillation of our broad and varied food styles over the years”, said Craig. “For us, this is a coming together of everything we’ve done. It’s an eclectic array of our food skills.”
Said chef Evatt: “The dining experience will be focused on share plates offering tastes from around the world.”
Their business card invites diners to “travel the world in one night”.
It is due to open on July 5 and serve dinners Wednesday to Saturdays. Reservations on 4787 7269 or info@cinnabar.kitchen.
