Chef Ashley Lambert’s secret ingredient is love, and as one of the new owners of Lindsay’s Cafe in Faulconbridge, she’ll be throwing plenty of it around.
She has a love for food, love for the industry and a love for other chefs with the same passion.
She and her sister Jessica Thorpe, who will be front of house, together with parents Julie and Geoff Lambert, have taken on the cafe within the picturesque grounds dedicated to artist Norman Lindsay.
“We are a family-owned business, born and bred here, with a passion to share with our community our love for beautiful food made from scratch,” Ms Thorpe said.
“Where we can’t make it, we support other local businesses that do, with locally roasted coffee, fresh local seasonal produce, and beautiful wines from local Mudgee and Orange regions.”
The menu reflects the beautiful Australian bush location, and includes a Lindsay’s bush breakfast, the ever-changing magic pudding, and the smashed pav – a twist on a true Aussie favourite.
The sisters have more than 16 years’ experience in the hospitality industry between them, including working at other local businesses and in the wider Sydney region.
“Ashley as a chef is passionate, highlighting locally sourced and Australian-made produce, from a fine dining background with creative flair,” said Ms Thorpe.
“I, on the other hand, enjoy getting to know the people I see each day. Connecting with locals from down the road, to volunteers at the gallery, to the adventurers that come from far and wide to the Mountains to see its beauty.”
The cafe is open daily from 10am to 4pm. Once a month they will offer a fine dining evening, with the next one planned for Valentine’s Day on February 14. For further details visit lindsayscafe.com.au.
And on January 20 from 3pm, a high tea will be held at the cafe, with all cakes, pastries and scones made in house. Bookings include a glass of sparkling on arrival and with the option of kids drinks available as well.
