A little bit about the role... 

The Maylands Hotel is looking for an experienced Sous Chef with a proven background in running a busy service. The successful candidate will support the Head Chef and Venue Manager in leading the kitchen team over a 7-day roster. 

If you can efficiently and effectively run each section of the kitchen with a particular skill for pans and grills, we would love to hear from you! 

• This role is available as a casual from 30 to 38 hours per week or as a salary up to 45 hours per week. 
• Must be available evenings and most weekends
• Deliver to our client's high expectation of a premium experience
• Maintain an overall knowledge and passion for food
• Observation of and implementation of allergy awareness controls.
• Adhere to all relevant health and safety and food safety standards
• Menu development for bistro dining, functions, and events
• Taking responsibility for food production and versatility to lead teams across all operations where required
• Tightly monitor costs with special regard to portion control, waste minimization, and stock control
• Be an integral part of our passionate leadership team who is dedicated to creating memorable experiences
• Responsibility for supporting existing apprentices and encouraging new ones
• Maintaining a premium and consistent approach to all food and service delivery levels.

The ideal candidate will have a real drive for creating fresh seasonal food, show flair, and embrace creativity.

• Minimum five years of experience in a fast-paced kitchen serving Western-style cuisine (essential)
• Previous experience as a Sous Chef (preferred)
• Trade qualified Chef (essential)
• Modern, contemporary, and innovative culinary skills 
• Knowledge of food and catering trends 
• Considers quality, technique, sanitation, food cost controls, and presentation critical to success 
• Delivers a high-quality product that not only meets but exceeds customer expectations
• Adhere to work health and safety laws, food safety standards, and allergen requirements
• Monitor costs across portion control, waste minimization, and stock management 
• Ensure a premium and consistent approach to all levels of food and service delivery
• Able to work autonomously as required 
• Ability to communicate effectively with a wide range of people
  (suppliers, customers, employees, and management)
• Have the ability to work under pressure and to tight deadlines in a calm and respectful manner
• Be motivated by a passion for quality and great service delivery
• High levels of experience in scheduling, managing, mentoring, and training staff
