Loretta Psaila has an array of tasty treats at her regular stall at Springwood Growers Market but customers definitely have a favourite.
“People get really excited, especially over my donuts,” she said. “I’ve had a lot of good feedback from people in the community. They’re keen and open-minded around here so it’s nice,” she said.
Ms Psaila has found a niche as a vegan baker – smashing the fallacy that vegan food is boring into the bargain.
Some of her reviews on social media include: “I could eat them forever! Try them you will love them.”
“Vegan or not these are exceptional – you'd never be able to tell the difference,” wrote another convert.
Ms Psaila has been a regular at the Springwood Growers Market in 2017 and added the Glenbrook Rotary Markets to her local stops in November.
The Faulconbridge resident gets up in the early hours on market days to start baking, admitting she feels the long hours at the end of the day.
But it does have its bonuses: “It’s great to see the sunrise though!”
Called Loretta’s Vegan Cakes, Ms Psaila started the home business three years ago while continuing her “day job” in retail.
“There’s definitely a niche for it in Blue Mountains,” she said.
