It's popular. Springwood's newest modern eatery The Baker's Wife opened just over a month ago and now more than 200 customers are flocking in daily to try their freshly made juices, baguettes and healthy seasonal salads.
From busy commuters at 6am for takeaway coffees to schoolkids hanging out for a gossip and something gluten free or paleo in the afternoon, the husband and wife duo, Dayne and Sarah Taylor, has hit on a winning combination.
The spacious shop on 250 Macquarie Road (it replaced Bowerbird homewares and before that the RSPCA store) is the second business for Dayne, 32, and Sarah, 28.
Combined with being the Springwood franchisee of the popular bread store, Bakers Delight, further up the road at number 206, they are now employing 40 people in the two operations.
Mrs Taylor likes the quirky name and said it was one of the original choices and they came back to it.
"She married into the bakery so it's nice she has this, she's been able to deliver what she wanted," Mr Taylor said.
"It was food we were craving to eat and we were finding we were having to take it home [from the shops] and make it ourselves which was a big frustration," Mrs Taylor added.
The hours have been a challenge, as they have a toddler and another on the way, but they both have a strong work ethic. Mrs Taylor's family has run a shoe store for generations in Cronulla and Mr Taylor has "worked six days since Year 8 [at Springwood High School] when I did the milk run three days a week and stuffed chickens in the chicken shop three days".
They took on a lot of early consumer feedback about salads - "especially from The Gazette's Facebook page" - and realised the need to cater for people with numerous food allergies.
By Christmas they hope to offer al fresco dining on weekends and Mr Taylor said they won't be stopping there.
In the next few years they hope to open a third business on acreage - a bigger juicery and salad bar on the highway with parking and outdoor garden seating - and are keeping an eye out for the right destination.
