While some parts of the festive season may be difficult to swallow, the newest Christmas sausage from Springwood’s Moore & Sons Butchery promises to get you over the pre-Christmas hump.
Owners Michael and Amy Moore have launched a creative countdown to the Christmas season with their twist on the 12 Days of Christmas. For the past 11 weeks, they have released a new sausage each week in the historic Macquarie St butcher shop at Springwood. Some of the flavours included pork and watermelon, macho nacho, kangaroo and lillypilly jam and venison with brandy cream and porcini mushrooms.
“We wanted to add a bit of fun to the lead up to Christmas,” owner Michael Moore said. “Customers come in and say ‘Give me this week’s sausage!’ ready to sample new flavours. It creates a sense of culinary adventure.”
The latest sausage is sure to cause a bit of a stir. It’s a camel and star anise sausage.
“It seemed appropriate,” explained Michael, “as we draw closer to Christmas to echo parts of the Christmas nativity through a totally original sausage.”
He describes the taste as “surprisingly sweet with fresh Middle Eastern flavours”. The sausage will be available for one week only.
Their final sausage, ‘The Distracted Shepherd’ (lamb sausage with rosemary and preserved lemons) will be released to coincide with Springwood’s late night shopping event on December 10. Platters of a selection of the 12 Snags of Christmas will be available to buy at the butchery on the night.
